Squid Nigiri recipe – 

Ingredients 

  • 4 arrow squid
  • 3 1/2 tablespoons rice vinegar
  • 1 teaspoon salt
  • 1 1/2 tablespoons sugar
  • 2 cups sushi rice
  • 1/16 teaspoon wasabi
  • 1/16 teaspoon lemon juice
  • 1/16 teaspoon sea salt

Instructions

  • In a rice cooker, cook the designated rice for 8 minutes
  • While the rice is cooking in a bowl add rice vinegar salt and sugar
  • Add this mixture to the rice and steam for 90 seconds
  • Once cooked take the rice out on a tray and allow it to cool
  • Carefully with your fingers, remove the gallbladder of the squid and peel off its skin
  • In the next step remove the membrane, skin and cartilage of the squid along with the ear
  • Split open the squid with a knife lengthwise and cut off the two ends of it
  • Clean the squid with water and pat dry
  • Cut the squid into small pieces
  • Using the cooked rice make small balls and place the squid on top of them
  • Season the same with salt and drops of lemon juice
